2 cups cooked, shredded chicken

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup salsa (mild or medium, depending on preference)

8 small flour tortillas

1 can (10 oz) green enchilada sauce

1 cup sour cream

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Fresh cilantro, for garnish

Sliced jalapeños, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Make the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, half of the shredded cheddar cheese, salsa, ground cumin, garlic powder, onion powder, and smoked paprika. Mix until well combined.

      Prepare Tortillas: Warm the flour tortillas in a microwave for about 20-30 seconds, or until soft and pliable. This will help when rolling them.

        Fill the Tortillas: Spoon about 1/4 cup of the chicken filling onto each tortilla. Roll them up tightly and place them seam-side down in a greased 9x13 inch baking dish.

          Add Sauce and Bake: Pour the green enchilada sauce evenly over the rolled enchiladas. Then, spread sour cream on top and sprinkle with the remaining shredded cheddar cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

              Garnish: After removing from the oven, let it cool for a few minutes. Garnish with fresh cilantro and sliced jalapeños if desired.

                Serve and Enjoy: Serve the warm enchiladas with additional salsa or sour cream on the side.
