1 lb ground beef (or your choice of ground meat)

1 cup breadcrumbs (Italian seasoned preferred)

1 large egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

1 tbsp olive oil

1 medium onion, diced

3 carrots, sliced

2 celery stalks, sliced

4 cups beef broth

1 can (14 oz) diced tomatoes

1 cup frozen peas

2 cups baby spinach

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Meatballs: In a large bowl, combine ground meat, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well blended. Form into small meatballs, about 1 inch in diameter.

    Brown the Meatballs: In a large pot or Dutch oven, heat the olive oil over medium heat. Add meatballs in batches and sear until browned on all sides, about 5 minutes. Remove them from the pot and set aside.

      Sauté the Vegetables: In the same pot, add the diced onion, sliced carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender.

        Combine the Ingredients: Pour in the beef broth and canned diced tomatoes (with juices). Bring to a simmer and stir in the meatballs.

          Simmer the Stew: Cover and simmer on low heat for 25-30 minutes, allowing the flavors to meld and the meatballs to cook through.

            Add Greens: Stir in the frozen peas and baby spinach. Cook for an additional 5 minutes, until the spinach has wilted.

              Serve: Ladle the stew into bowls and garnish with fresh parsley. Enjoy your cozy meatball stew with crusty bread or over rice!
