2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

4 medium carrots, sliced

3 medium potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

1 cup celery, chopped

4 cups low-sodium chicken broth

1 cup frozen peas

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Chicken:

    - In a skillet over medium-high heat, add the olive oil. Once hot, add the chicken pieces and season with salt and pepper. Sear until browned on all sides, about 5-7 minutes. This step enhances flavor but is optional if youre short on time.

      Prepare the Slow Cooker:

        - In the slow cooker, combine the carrots, potatoes, onion, garlic, celery, and thawed peas.

          Add Chicken and Seasonings:

            - Place the seared chicken on top of the vegetable mixture. Sprinkle in the thyme, rosemary, and add the bay leaf.

              Pour in the Broth:

                  Cook:

                      Thicken (Optional):
