3 cloves garlic, minced

4 cups vegetable broth

2 cups kale, chopped (or spinach)

1 cup carrots, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 cup sour cream (or Greek yogurt for a healthier twist)

1 tablespoon Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Bacon bits (optional, for garnish)

Prepare the Ingredients: Start by dicing the Yukon Gold potatoes, chopping the onion, and mincing the garlic. Set aside.

    Sauté Aromatics: In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional 1 minute until fragrant.

      Combine in Slow Cooker: Transfer the sautéed onion and garlic to the slow cooker. Add the diced potatoes, carrots, vegetable broth, kale, thyme, paprika, salt, and pepper. Stir everything to combine.

        Slow Cook: Cover the slow cooker and set it on low heat. Cook for 6-8 hours or on high for 3-4 hours until the potatoes and carrots are tender.

          Blend for Creaminess: Once cooked, use an immersion blender to purée part of the soup to create a creamy texture while leaving some chunks for heartiness. Alternatively, you can transfer portions to a blender and blend until smooth, then return it to the slow cooker.

            Finish with Creaminess: Stir in the sour cream (or Greek yogurt) and Dijon mustard, adjusting the seasoning with additional salt and pepper if needed. Let it warm through for another 10 minutes.
