1 lb mixed seafood (shrimp, scallops, and white fish, diced)

4 slices of thick-cut bacon, diced

1 medium onion, chopped

2 cloves garlic, minced

2 medium potatoes, peeled and diced

2 cups corn kernels (fresh or frozen)

4 cups seafood stock or clam juice

1 cup heavy cream

1 tsp dried thyme

1 tsp Old Bay seasoning

Salt and pepper to taste

Chopped fresh parsley or chives for garnish

1 loaf of crusty bread (for serving)

Instructions
 

Cook the Bacon: In a large heavy-bottom pot, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the rendered fat in the pot.

    Sauté Onions and Garlic: Add the chopped onion to the pot and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Potatoes: Add the diced potatoes to the pot and stir well. Pour in the seafood stock (or clam juice) and bring to a simmer. Cook for about 10-15 minutes, or until the potatoes are tender.

        Incorporate Seafood and Corn: Add the mixed seafood, corn, dried thyme, Old Bay seasoning, and the cooked bacon back into the pot. Stir gently and let everything simmer for an additional 5-7 minutes, or until the seafood is cooked through.

          Finish with Cream: Slowly stir in the heavy cream, allowing the chowder to heat through. Taste and adjust seasoning with salt and pepper as needed.

            Serve: Ladle the chowder into bowls and garnish with chopped parsley or chives. Serve with warm crusty bread on the side for dipping.
