Ingredients

2 cups cooked jasmine rice (preferably day-old)

1 cup lump crab meat, picked over for shells

2 tablespoons vegetable oil

2 eggs, lightly beaten

1/2 cup green onions, chopped (reserve some for garnish)

1/2 cup bell pepper, diced (red or yellow for sweetness)

1/2 cup frozen peas

2 cloves garlic, minced

2 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce

1 teaspoon sesame oil

1/4 teaspoon freshly ground black pepper

Pinch of red pepper flakes (optional for heat)

Lemon wedges, for serving

Instructions

Prep the Ingredients: Ensure your cooked rice is cold and broken up well to avoid clumping. Check crab meat for any remnants of shells.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.

Scramble the Eggs: Add the beaten eggs to the skillet and scramble until just set. Remove them from the skillet and set aside.

Sauté Vegetables: In the same skillet, add a little more oil if needed, then add the minced garlic and sauté for about 30 seconds until fragrant. Next, add the bell peppers and green onions (reserve some green onions for garnish) and cook for 2-3 minutes until softened.

Add Rice: Increase the heat slightly, add the cold jasmine rice to the skillet, and stir-fry for about 4-5 minutes, breaking up any clumps and ensuring the rice is heated through.

Incorporate Crab and Flavors: Gently fold in the lump crab meat, cooked peas, scrambled eggs, soy sauce, oyster sauce, sesame oil, black pepper, and red pepper flakes (if using). Stir everything together and sauté for an additional 2-3 minutes until combined and heated throughout.

Garnish and Serve: Remove the skillet from heat, taste, and adjust seasoning if necessary. Serve the fried rice hot, garnished with reserved green onions and fresh lemon wedges on the side.
