2 cups cooked chicken, shredded or diced

1 cup fresh cranberries (or 1/2 cup dried cranberries)

1/2 cup sliced almonds, toasted

1/2 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/2 cup Greek yogurt (or mayonnaise for a richer taste)

1 tablespoon honey

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

Mixed greens (for serving)

Optional: 1/4 cup crumbled feta cheese or goat cheese

Instructions
 

Prepare Chicken: If using leftover chicken, shred or dice it into bite-sized pieces. For freshly cooked chicken, poach, grill, or roast it until fully cooked and let it cool before shredding.

    Toast Almonds: In a dry skillet over medium heat, toast the sliced almonds until they are golden brown and fragrant, stirring frequently to avoid burning. Remove from heat and let cool.

      Mix Dressing: In a medium bowl, whisk together the Greek yogurt, honey, Dijon mustard, lemon juice, salt, and pepper until well combined. Adjust seasoning as needed.
