1 sheet of puff pastry, thawed

1 cup fresh or canned cranberry sauce

8 oz Brie cheese, rind removed and cut into small pieces

1 egg, beaten (for egg wash)

Fresh thyme leaves, for garnish

1 tablespoon honey (optional)

Sea salt, for sprinkling

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    On a lightly floured surface, unfold the puff pastry and roll it out gently to smooth any creases. Cut it into 2.5-inch squares.

      Place a square of puff pastry on the prepared baking sheet.

        In the center of each pastry square, add about 1 teaspoon of cranberry sauce, followed by a piece of Brie cheese.

          Fold the corners of the pastry squares toward the center, pinching them to form a small pocket. Make sure to seal them well so the filling doesn’t leak out.

            Brush the tops of the pastry bites with the beaten egg for a golden finish.

              Optional: Drizzle a tiny amount of honey over the top of each bite and sprinkle with sea salt.

                Bake in the preheated oven for 15-18 minutes or until the pastry is puffed and golden brown.

                  Remove from the oven and let cool slightly. Garnish with fresh thyme leaves before serving.
