Ingredients
  

8 oz cream cheese, softened

1 cup goat cheese, softened

1/2 cup dried cranberries, chopped

1/2 cup pistachios, shelled and chopped

2 tablespoons honey

1 teaspoon vanilla extract

1/4 teaspoon white pepper

1 tablespoon fresh parsley, finely chopped (optional for garnish)

Crackers or fresh fruit for serving

Instructions
 

In a mixing bowl, combine softened cream cheese and goat cheese. Use a hand mixer or a spatula to blend until smooth and creamy.

    Add dried cranberries, chopped pistachios, honey, vanilla extract, and white pepper to the cheese mixture. Fold gently until all ingredients are evenly distributed.

      Place a sheet of plastic wrap on a clean, flat surface. Spoon the cheese mixture onto the center of the plastic wrap and mold it into a log shape using the wrap.

        Wrap the log tightly in the plastic wrap, twisting the ends to secure it. Refrigerate for at least 2 hours or until firm.

          Once chilled, remove the cheese log from the plastic wrap. Roll the log in any remaining chopped pistachios to coat the outside evenly.

            Place the cheese log on a serving platter and garnish with fresh parsley if desired. Serve with a variety of crackers or fresh fruit.
