Cranberry Roast Beef Recipe

Ingredients
  

3 to 4 pounds beef roast (such as chuck or eye of round)

1 cup fresh cranberries

1 cup beef broth

1/2 cup orange juice

1/4 cup brown sugar

1 tablespoon Dijon mustard

2 tablespoons soy sauce

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 tablespoons olive oil

Optional: Fresh herbs for garnish (parsley or thyme)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C).

    Prepare the Beef: Pat the beef roast dry with paper towels and season generously with salt and pepper.

      Sear the Roast: In a large skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until browned (about 4-5 minutes per side). Transfer the roast to a roasting pan.

        Make the Cranberry Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then add the fresh cranberries, beef broth, orange juice, brown sugar, Dijon mustard, soy sauce, rosemary, and thyme. Stir well and let it simmer for about 5 minutes until the cranberries start to burst and the sauce thickens slightly.

          Glaze the Roast: Pour the cranberry sauce over the seared roast, making sure to coat it evenly.

            Roast the Beef: Cover the roasting pan with foil and place it in the preheated oven. Roast for about 2 to 2.5 hours or until the internal temperature reaches your desired doneness (medium-rare is 135°F, medium is 145°F).

              Rest and Serve: Once done, remove the roast from the oven and allow it to rest for at least 15 minutes before slicing. This allows the juices to redistribute.

                Serve: Slice the roast and drizzle with additional cranberry sauce. Garnish with fresh herbs if desired. Serve with your choice of sides, such as mashed potatoes or roasted vegetables.
