Ingredients

2 cups fresh cranberries, rinsed and drained

1 cup chopped apples (preferably Granny Smith)

1 cup diced celery

1/2 cup walnuts, chopped

1/2 cup feta cheese, crumbled

2 tablespoons honey

1/4 cup plain Greek yogurt

1 tablespoon lemon juice

1 teaspoon cinnamon

Salt and pepper to taste

Fresh mint leaves for garnish

Instructions

Blend Cranberries: In a food processor, pulse the fresh cranberries a few times until finely chopped, but not pureed. Set aside in a large mixing bowl.

Combine Ingredients: Add the chopped apples, diced celery, walnuts, and crumbled feta cheese to the bowl with cranberries.

Mix Dressing: In a separate small bowl, whisk together the honey, Greek yogurt, lemon juice, cinnamon, and a pinch of salt and pepper until smooth.

Combine Everything: Pour the dressing over the cranberry mixture and gently toss to combine, ensuring everything is evenly coated.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

Serve: Before serving, give the salad a gentle toss and garnish with fresh mint leaves. Enjoy it cold as a refreshing side dish for Thanksgiving!
