Ingredients

1 box (3 oz) raspberry flavored gelatin (Jello)

1 cup boiling water

1 cup fresh or frozen cranberries, chopped

1 cup sugar

1/2 cup walnuts, chopped

1 cup crushed pineapple, drained

1 cup whipped cream or whipped topping

1/2 tsp vanilla extract

Instructions

In a mixing bowl, dissolve the raspberry flavored gelatin in 1 cup of boiling water. Stir until completely dissolved.

Allow the gelatin mixture to cool slightly, then add the chopped cranberries and sugar. Stir until the sugar is dissolved.

Incorporate the chopped walnuts and drained crushed pineapple into the mixture, combining thoroughly.

Pour the mixture into a mold or serving dish and refrigerate for about 4 hours, or until it is firm.

Once firmly set, whip the cream (or use whipped topping) with the vanilla extract until soft peaks form.

Carefully invert the Jello salad onto a serving plate or simply scoop it from the mold if using a dish.

Spread the whipped cream evenly over the top, or serve it on the side for guests to add themselves.

Garnish with additional cranberries or walnuts if desired, and serve chilled.
