Cranberry & Spinach Stuffed Chicken

Ingredients
  

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup cream cheese, softened

1 cup dried cranberries, chopped

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large bowl, combine the chopped spinach, cream cheese, dried cranberries, mozzarella cheese, Parmesan cheese, minced garlic, thyme, salt, and black pepper. Mix until well combined.

      Prepare the Chicken: Carefully slice a pocket into each chicken breast. Make sure not to cut all the way through.

        Stuff the Chicken: Generously fill each pocket with the cranberry and spinach mixture. Secure the opening with toothpicks if necessary.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear them for about 3-4 minutes on each side until golden brown.

            Bake the Chicken: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

              Rest and Serve: Remove the chicken from the oven, let it rest for 5 minutes, then garnish with fresh parsley and serve warm.
