12 oz (340g) spaghetti or pasta of choice

2 tbsp olive oil

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 tsp sugar

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste

1 cup heavy cream or full-fat coconut milk

1 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish

Extra Parmesan cheese for serving

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.

      Add Tomatoes and Seasonings: Pour in the crushed tomatoes, add the sugar, red pepper flakes (if using), and season with salt and black pepper. Stir well and let it simmer for about 5 minutes.

        Create the Creamy Sauce: Lower the heat and pour in the heavy cream or coconut milk. Stir to combine, then let it simmer for another 3-4 minutes until the sauce thickens slightly.

          Mix in Basil and Cheese: Add the chopped fresh basil and grated Parmesan cheese to the sauce. Stir until the cheese melts and everything is well combined. If the sauce is too thick, add a splash of the reserved pasta water to reach desired consistency.

            Combine with Pasta: Add the cooked pasta to the skillet with the creamy tomato sauce. Toss everything together until the pasta is evenly coated. Cook for another minute to heat through, if necessary.
