  • 1 cup fresh blueberries washed and drained
  • 1/4 cup honey or maple syrup for sweetness
  • 1/2 teaspoon vanilla extract
  • 1 cup rolled oats regular or quick oats
  • 1 teaspoon baking powder
  • 1 large egg lightly beaten
  • 1/2 teaspoon cinnamon ground
  • 1/4 cup Greek yogurt plain, for creaminess
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish with cooking spray or a bit of oil.
  • In a large mixing bowl, combine the cottage cheese, Greek yogurt, honey, vanilla extract, and the beaten egg. Mix until smooth and creamy.
  • Add the rolled oats, baking powder, cinnamon, and fresh blueberries to the bowl, gently folding them into the mixture to avoid crushing the blueberries.
  • Pour the entire mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are golden and the center is set.
  • Remove from the oven and allow to cool for about 5 minutes before slicing into squares. Serve warm or refrigerate for meal prep.
