8 oz fettuccine pasta

2 boneless, skinless chicken breasts (about 1 lb), cut into strips

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Season Chicken: In a bowl, toss the chicken strips with Cajun seasoning until evenly coated.

      Sauté Chicken: In a large skillet over medium heat, heat olive oil. Add the seasoned chicken and sauté for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the chopped onion and sliced red bell pepper. Sauté for about 3-4 minutes, until the onion is translucent. Add the minced garlic and sauté for another minute until fragrant.

          Make the Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, and let it simmer for about 3-5 minutes until slightly thickened.

            Combine Ingredients: Add the cooked chicken, cherry tomatoes, and cooked fettuccine to the sauce. Stir gently to coat everything in the creamy sauce. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

              Cheese and Season: Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste. Cook for another 2 minutes to heat everything through.
