Ingredients

8 oz (225g) fettuccine or your favorite pasta

1 lb (450g) Andouille sausage, sliced

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes, with juice

1 cup heavy cream

1 cup chicken broth

1 tablespoon Cajun seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley, for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the chopped onion, bell pepper, and minced garlic. Sauté until the onion becomes translucent and the peppers soften, about 3-4 minutes.

Add Tomatoes and Seasonings: Stir in the canned diced tomatoes (with their juice), Cajun seasoning, salt, and pepper. Let the mixture simmer for about 5 minutes to develop the flavors.

Make it Creamy: Pour in the heavy cream and chicken broth, stirring well to combine. Bring the sauce to a gentle simmer and allow it to thicken slightly, about 3-4 minutes.

Combine: Add the cooked sausage back into the skillet and stir to combine. Then, fold in the cooked pasta and Parmesan cheese until everything is well coated in the creamy sauce. Adjust seasoning if necessary.

Serve: Plate the creamy Cajun sausage pasta, garnishing with fresh parsley and additional Parmesan cheese, if desired. Enjoy your flavorful dish!
