Creamy Cheesy Garlic Scalloped Potatoes

2 pounds of Yukon Gold potatoes, thinly sliced

2 cups heavy cream

1 cup whole milk

4 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Baking Dish: Grease a 9x13 inch baking dish with a tablespoon of butter.

      Boil The Cream Mixture: In a medium saucepan over medium heat, combine heavy cream, whole milk, minced garlic, salt, black pepper, and nutmeg. Heat until just simmering, but do not boil. Remove from heat.

        Layer Potatoes: Arrange a layer of thinly sliced Yukon Gold potatoes evenly in the bottom of the prepared baking dish.

          Add Cheese: Sprinkle a portion of the sharp cheddar cheese and half of the Parmesan cheese over the potato layer.

            Repeat Layers: Continue layering potatoes, cream mixture, cheddar, and Parmesan until all ingredients are used, finishing with a layer of cheese on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 25-30 minutes, or until the top is golden and bubbly, and the potatoes are tender when pierced with a fork.

                Rest and Serve: Let the scalloped potatoes sit for 10 minutes before serving. Garnish with fresh thyme leaves and parsley for a pop of color.
