Ingredients

2 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 garlic clove, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 tablespoon lemon juice

Fresh parsley, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

Cook the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they are browned and cooked through. Remove the chicken from the skillet and set aside.

Make the Sauce: In the same skillet, reduce the heat to medium-low. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer.

Add Spinach and Parmesan: Stir in the chopped spinach and cook until wilted. Gradually add the grated Parmesan cheese while stirring continuously until melted and the sauce is creamy.

Combine Chicken and Sauce: Return the chicken breasts to the skillet, spooning some sauce over them. Add the lemon juice for a touch of brightness. Allow the chicken to heat through for about 2 minutes.

Garnish and Serve: Remove from heat and garnish with fresh parsley. Serve the creamy chicken with the spinach Parmesan sauce drizzled over the top. Enjoy with your favorite side, such as pasta or rice.
