3 cups shredded cooked chicken (rotisserie chicken works great)

10 small corn tortillas

2 cups cream of chicken soup (homemade or store-bought)

1 cup sour cream

1 can (4 oz) diced green chiles

2 cups shredded cheddar cheese (divided)

1 tablespoon taco seasoning

1/2 cup diced onions

1 cup corn (canned or frozen, thawed)

1/2 cup chopped fresh cilantro

Olive oil for greasing

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with olive oil.

    Prepare the Sauce: In a mixing bowl, combine the cream of chicken soup, sour cream, diced green chiles, taco seasoning, salt, and pepper. Mix until smooth and well combined.

      Layer the Tortillas: Cut the corn tortillas in half to make them easier to layer. Start by placing a layer of tortillas on the bottom of the greased casserole dish, covering it completely.

        Add the Chicken Mixture: Spread half of the shredded chicken evenly over the tortillas. Spoon a portion of the creamy sauce over the chicken, then sprinkle with 1/3 of the cheddar cheese.

          Continue Layering: Add another layer of tortillas, followed by the remaining chicken, a bit more sauce, half of the corn, and half of the onions. Repeat the layering process once more: tortillas, the rest of the sauce, remaining corn, and the rest of the onions.

            Final Layer: Finish with a final layer of tortillas on top, then pour any remaining sauce over this layer and sprinkle with the remaining cheddar cheese and chopped cilantro.

              Bake: Cover the casserole with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

                Serve: Let the casserole sit for about 10 minutes before serving. This helps it set a little and makes it easier to cut. Serve warm, garnished with additional cilantro if desired.
