Ingredients
  

8 oz (225 g) fettuccine or your pasta of choice

2 tablespoons olive oil

1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces

4 slices bacon, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 cup corn kernels (fresh, frozen, or canned)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and let it drain on paper towels. Leave about 1 tablespoon of bacon fat in the skillet.

      Sauté Chicken: Add olive oil to the skillet. Once hot, add the chicken pieces, season with salt and pepper, and sauté until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent. Add the corn and smoked paprika, cooking for an additional 2 minutes.

          Make the Sauce: Reduce heat to low, then stir in the heavy cream and Parmesan cheese. Allow to simmer for a few minutes until the cheese is melted and the sauce thickens slightly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Combine: Return the cooked chicken and crispy bacon to the skillet. Add the cooked pasta, tossing everything together to coat in the creamy sauce. Adjust seasoning with additional salt and pepper if needed.

              Serve: Plate the creamy chicken pasta and garnish with fresh chopped parsley. Enjoy hot!
