2 cups cooked wild rice

1 lb boneless, skinless chicken breasts, diced

2 cups broccoli florets (fresh or frozen)

1 cup diced carrots

1 cup sliced mushrooms

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

½ cup breadcrumbs (for topping)

2 tablespoons olive oil

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until golden brown and fully cooked, about 5-7 minutes. Remove from heat and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion, garlic, carrots, and mushrooms. Sauté for about 5 minutes until the vegetables are softened. If using frozen broccoli, add it along with the other vegetables; if using fresh, add in later.

        Mix the Creamy Base: In a large mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, thyme, rosemary, salt, and pepper. Mix until smooth.

          Combine Ingredients: In a large casserole dish, combine the cooked wild rice, sautéed vegetables (with broccoli), cooked chicken, and the creamy mixture. Stir everything together until well incorporated.
