Creamy Christmas Chicken Casserole

3 cups cooked chicken, shredded (preferably rotisserie)

2 cups fresh broccoli florets

1 cup sliced carrots

1 cup peas (fresh or frozen)

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup cooked white rice or quinoa

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried thyme

Salt and pepper to taste

1 cup French fried onions (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.

    In a large mixing bowl, combine the shredded chicken, broccoli florets, sliced carrots, peas, cream of mushroom soup, sour cream, cooked rice or quinoa, garlic powder, onion powder, dried thyme, salt, and pepper. Mix until all ingredients are well combined.

      Pour the chicken mixture into the prepared casserole dish, spreading it evenly.

        Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

          Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted.

            Remove the casserole from the oven and sprinkle the French fried onions over the top. Return to the oven for an additional 5-7 minutes, until the onions are golden brown.

              Once done, let the casserole cool for a few minutes, then garnish with freshly chopped parsley before serving.
