For the Crust:

1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

1 tsp vanilla extract

For the Cheesecake Filling:

24 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 cup heavy cream

Zest of 1 lemon

2 tbsp all-purpose flour

For the Crème Brûlée Topping:

½ cup granulated sugar (for caramelizing)

1 tsp vanilla extract

1 tbsp water

Instructions
 

Preheat the Oven:

    Preheat your oven to 325°F (160°C).

      Prepare the Crust:

        In a medium bowl, mix graham cracker crumbs, sugar, melted butter, and vanilla extract until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

          Make the Cheesecake Filling:

            In a large mixing bowl, beat the softened cream cheese and sugar until creamy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and lemon zest.

              Add Heavy Cream:

                Gradually pour in the heavy cream while continuing to mix until the batter is smooth. Finally, add the flour and mix until just combined.

                  Bake the Cheesecake:

                    Pour the cheesecake filling over the pre-baked crust. Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.

                      Cool & Chill:

                        Turn off the oven and let the cheesecake sit inside for an additional hour. Afterward, remove it and allow it to cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

                          Prepare the Crème Brûlée Topping:

                            In a small saucepan, combine ½ cup granulated sugar, vanilla extract, and water. Heat over medium heat until sugar dissolves, stirring constantly. Remove from heat and let it cool slightly.

                              Caramelizing the Sugar:

                                Once the cheesecake is thoroughly chilled, pour a thin layer of the caramel mixture on top. Use a kitchen torch to carefully caramelize the sugar until it bubbles and turns golden brown. If you don't have a torch, you can place it under the broiler for a few minutes (watching closely, it can burn easily).

                                  Serve:
