Ingredients

1 lb boneless, skinless chicken breasts

1 cup wild rice blend, rinsed and drained

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

4 cloves garlic, minced

6 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon black pepper

1 cup heavy cream

1 cup frozen peas

Salt, to taste

Fresh parsley, for garnish

Instructions

Prep the Ingredients: Start by rinsing the wild rice blend under cold water. Dice the onion, carrots, celery, and mince the garlic.

Layer the Crockpot: In a large crockpot, place the rinsed wild rice blend, diced chicken breasts, onion, carrots, celery, and garlic.

Add Liquids and Spices: Pour in the chicken broth, and add thyme, parsley, and black pepper. Stir everything gently to combine.

Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the wild rice is tender.

Shred the Chicken: Once cooked, carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken back to the crockpot.

Stir in Cream and Peas: Stir in the heavy cream and frozen peas. Cook for an additional 20-30 minutes on low, until heated through.

Season and Serve: Taste the soup and add salt if needed. Ladle the creamy chicken wild rice soup into bowls and garnish with fresh parsley.
