Creamy Garlic Mushroom Skillet (Vegetarian Dinner)

This creamy garlic mushroom skillet (vegetarian dinner) is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

500g (about 1 lb) fresh mushrooms (cremini, shiitake, or a mix)

3 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 cup vegetable broth

1 cup heavy cream or coconut cream for a vegan option

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

200g (7 oz) pasta of your choice (optional, for serving)

Grated Parmesan cheese (for serving, optional)

Instructions
 

Prepare the Pasta (Optional): If you're using pasta, cook it according to the package instructions in salted water. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 2-3 minutes until soft and translucent.

      Cook the Mushrooms: Add the cleaned and sliced mushrooms to the skillet. Stir well and let them cook for about 5-7 minutes or until they release their moisture and start to brown.

        Infuse Garlic: Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, stirring frequently to prevent burning.

          Create the Sauce: Pour in the vegetable broth and bring to a simmer. Allow it to cook for about 3 minutes. Then add the heavy cream and stir until well combined.

            Season: Add the dried thyme, oregano, salt, and pepper. Stir to incorporate the seasonings. Let the sauce simmer for about 5 minutes or until it thickens to your desired consistency. If the sauce becomes too thick, you can add a little more vegetable broth to loosen it.

              Combine with Pasta (if using): If you have cooked pasta, add it to the mushroom sauce and toss gently until the pasta is well coated.

                Serve: Spoon the creamy garlic mushroom skillet onto plates, garnish with freshly chopped parsley, and sprinkle with grated Parmesan cheese if desired. Enjoy warm!
