Ingredients

1 lb (450g) large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 medium onion, diced

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 cup heavy cream

½ cup chicken or vegetable broth

1 cup spinach leaves, chopped

1 teaspoon lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked rice or pasta (for serving)

Instructions

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Shrimp: Season the shrimp with salt, pepper, smoked paprika, and cayenne pepper. Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Sauce: In the same skillet, add the chicken or vegetable broth, scraping up any browned bits stuck to the pan. Pour in the heavy cream and stir to combine. Let the sauce simmer for about 3-5 minutes, allowing it to thicken slightly.

Incorporate Spinach: Add the chopped spinach and lemon juice to the sauce, stirring until the spinach wilts and the sauce is well combined. Return the shrimp to the skillet and cook for an additional 2 minutes, ensuring everything is heated through.

Serve: Taste and adjust the seasoning if necessary. Serve hot over cooked rice or pasta, and garnish with fresh parsley.
