Creamy Garlic Parmesan Chicken and Rice

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1 cup rice (white or brown)

4 cups chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

1 medium onion, finely chopped

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup frozen peas (optional)

Fresh parsley, chopped for garnish

Instructions
 

Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt, pepper, and Italian seasoning. Once the oil is hot, add the chicken to the skillet and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Saut Aromatics: In the same skillet, add the chopped onion and cook for about 3-4 minutes until translucent. Add the minced garlic and saut for an additional 1-2 minutes until fragrant.

      Add Rice: Stir in the rice and cook for 1-2 minutes, allowing it to coat in the olive oil and absorb some of the flavors from the skillet.

        Combine Broth and Cream: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle boil.

          Return Chicken to Skillet: Once boiling, reduce the heat to low, add the seared chicken thighs back into the skillet, and cover. Let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

            Add Peas: If using, stir in the frozen peas in the last 5 minutes of cooking for a pop of color and sweetness.

              Finish with Parmesan: Once the rice is cooked, stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with more salt and pepper if needed.

                Serve: Garnish with freshly chopped parsley and serve hot, spooning the creamy rice and chicken onto plates.
