Creamy Garlic Parmesan Chicken Pasta

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, diced

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 cup chicken broth

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Season the Chicken: While the pasta is cooking, season the diced chicken with salt and pepper.

      Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasoned chicken and cook until golden brown and cooked through, about 7-10 minutes. Remove the chicken from the skillet and set aside.

        Sauté Garlic: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

          Make the Cream Sauce: Stir in the chicken broth and bring to a simmer. Add the heavy cream, Italian seasoning, and half of the Parmesan cheese, stirring until the cheese is melted and the sauce is creamy. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.

            Combine Pasta and Chicken: Return the cooked chicken to the skillet and add the drained pasta. Toss everything together in the creamy sauce until evenly coated. Adjust seasoning with salt and pepper to taste.

              Serve: Plate the creamy garlic Parmesan chicken pasta and sprinkle the remaining Parmesan cheese on top. Garnish with chopped parsley for a pop of color.
