Ingredients

8 oz fettuccine pasta

1 lb shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 tsp red pepper flakes (optional)

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Zest of 1 lemon

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Sauté the Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from skillet and set aside.

Make the Garlic Sauce: In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant.

Create the Creamy Mixture: Pour in the chicken broth and heavy cream. Bring to a simmer and reduce the heat to low. Stir in the Parmesan cheese, letting it melt into the sauce, and season with more salt and pepper to taste.

Combine Shrimp and Pasta: Add the cooked shrimp and halved cherry tomatoes into the sauce. Toss to coat and let simmer for another 2-3 minutes until everything is heated through. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

Finish & Serve: Add cooked fettuccine to the skillet and toss until well-coated. Remove from heat and stir in lemon zest and chopped parsley before serving. Enjoy your delicious creamy garlic shrimp pasta!
