1 pound ground beef or Italian sausage

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

4 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes (with juice)

1 cup heavy cream

1 cup cooked pasta (like orzo or ditalini)

Fresh basil leaves for garnish

Instructions
 

Make the Meatballs: In a large bowl, combine ground beef (or sausage), Parmesan cheese, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined. Form mixture into small meatballs, about 1 inch in diameter. Set aside.

    Brown the Meatballs: In a large pot or Dutch oven, heat olive oil over medium heat. Add the meatballs in batches, cooking until browned on all sides, about 5-7 minutes. Remove meatballs and set aside.

      Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-6 minutes.

        Add Broth and Tomatoes: Pour in the chicken or vegetable broth and the diced tomatoes with their juice. Bring the mixture to a simmer.

          Add Meatballs Back: Gently add the browned meatballs back to the pot. Cover and let simmer for 20 minutes, allowing the flavors to meld.

            Stir in Cream and Pasta: Lower the heat and slowly stir in the heavy cream and cooked pasta. Heat through for an additional 5 minutes, ensuring everything is warm and mixed well.
