Ingredients

300g mixed mushrooms (button, cremini, shiitake), sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

2 cloves garlic, minced

1 small onion, finely chopped

100ml heavy cream

100ml vegetable broth

1 tablespoon soy sauce

Salt and pepper to taste

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

4 slices of rustic bread (sourdough or country loaf)

Grated Parmesan cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant, about 3-4 minutes.

Cook the Mushrooms: Add the sliced mushrooms to the skillet, stirring occasionally. Cook until the mushrooms are tender and have released their moisture, about 5-7 minutes. Season with salt and pepper.

Create the Sauce: Pour in the vegetable broth, soy sauce, and thyme. Stir well and let simmer for about 3-4 minutes to blend the flavors.

Add Cream: Lower the heat and pour in the heavy cream, mixing until well combined. Let the sauce cook for another 2-3 minutes, allowing it to thicken slightly. Adjust seasoning with more salt and pepper if necessary.

Toast the Bread: While the sauce simmers, toast the slices of rustic bread until golden and crispy.

Assemble the Dish: To serve, place the toasted bread on plates and generously spoon the creamy mushroom mixture on top.

Garnish and Serve: Sprinkle with grated Parmesan cheese and chopped fresh parsley before serving.
