250g mixed mushrooms (button, cremini, shiitake), sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

2 cloves garlic, minced

1 small onion, finely chopped

200ml heavy cream

50g cream cheese

1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)

Salt and pepper, to taste

4 slices of sourdough bread

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Sauté Onions and Garlic: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then add minced garlic and cook for an additional minute until fragrant.

    Cook Mushrooms: Increase the heat to medium-high, add the sliced mushrooms to the skillet, and cook for about 6-8 minutes, until they are browned and have released their moisture. Stir occasionally.

      Make it Creamy: Reduce the heat to low. Add the heavy cream and cream cheese to the mushroom mixture, stirring until the cream cheese has melted and the sauce is smooth. Stir in the thyme, and season with salt and pepper to taste. Let it simmer on low heat for about 3-5 minutes until thickened.

        Prepare Toast: While the mushroom mixture is simmering, toast the sourdough bread slices until golden brown and crisp.
