1 pound Italian sausage (mild or spicy, your choice)

1 medium onion, diced

2 cloves garlic, minced

3 carrots, chopped

2 celery stalks, chopped

1 (14.5 oz) can diced tomatoes, with juice

4 cups chicken broth

1 cup heavy cream

1 cup ditalini pasta

1 cup freshly grated Parmesan cheese, plus more for serving

1 teaspoon dried oregano

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Cook the Sausage: In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Use a wooden spoon to break it into small pieces as it cooks. Drain any excess fat and remove the sausage from the pot; set aside.

    Sauté the Vegetables: In the same pot, add diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender and the onion is translucent.

      Add Tomatoes and Broth: Stir in the canned diced tomatoes (with their juice) and chicken broth. Bring the mixture to a boil over high heat.

        Cook Pasta: Once boiling, add the ditalini pasta and prepared sausage back into the pot. Reduce the heat to a simmer and cook for about 8-10 minutes, or until the pasta is al dente.
