8 oz fettuccine pasta

2 tablespoons unsalted butter

1 tablespoon olive oil

2 cloves garlic, minced

1 lb chicken breast, diced

1 tablespoon Cajun seasoning

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup ranch dressing

1/2 cup sun-dried tomatoes, chopped

1 cup baby spinach

Salt and pepper to taste

Fresh parsley, for garnish

Grated cheese for topping (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt the butter and olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the diced chicken and Cajun seasoning, cooking until the chicken is browned and cooked through, about 7-10 minutes.

      Make the Sauce: Reduce the heat to low and pour in the heavy cream. Stir well and let it simmer for a minute before adding the grated Parmesan cheese and ranch dressing, stirring until smooth and creamy.

        Combine Ingredients: Add the chopped sun-dried tomatoes and baby spinach to the sauce, cooking until the spinach has wilted down. Season with salt and pepper to taste.

          Mix Pasta and Sauce: Add the cooked fettuccine to the skillet, tossing to coat the pasta evenly in the creamy sauce. Allow it to heat through for a couple of minutes.
