Ingredients
  

1 pound ground beef

12 ounces rotini pasta

1 can (10 oz) Rotel diced tomatoes with green chilies, undrained

1 can (15 oz) tomato sauce

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup diced onions

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

1 tablespoon olive oil

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onions and minced garlic. Sauté for about 2-3 minutes until fragrant and onions are translucent.

      Add Ground Beef: Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it’s browned and cooked through, about 5-7 minutes. Drain excess grease if necessary.

        Create the Sauce: To the beef mixture, stir in the undrained Rotel, tomato sauce, heavy cream, chili powder, cumin, paprika, and season with salt and pepper. Bring the mixture to a simmer and cook for about 5 minutes, stirring occasionally.

          Combine Pasta and Sauce: Add the cooked rotini pasta into the skillet, stirring well to coat the pasta evenly with the creamy sauce. Sprinkle in the shredded cheddar cheese and mix until melted and combined.

            Serve: Remove from heat and let cool for a couple of minutes. Serve hot, garnished with fresh cilantro if desired.
