For the Grits:

1 cup stone-ground grits

4 cups chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons butter

Salt and black pepper, to taste

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 slices bacon, chopped

1 medium onion, finely diced

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon Old Bay seasoning

1/2 teaspoon cayenne pepper (adjust for spice preference)

2 tablespoons Worcestershire sauce

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Grits:

    - In a medium saucepan, bring the chicken broth to a boil.

      - Gradually whisk in the grits, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally until thick.

        - Stir in the heavy cream, cheddar cheese, butter, salt, and black pepper. Keep warm on low heat, stirring occasionally.

          Cook the Shrimp:

            - In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the skillet.

              - Add the diced onion and red bell pepper to the skillet, sautéing until softened, about 5 minutes.

                - Stir in the minced garlic and cook for another minute until fragrant.

                  - Add the shrimp to the skillet, followed by the smoked paprika, Old Bay seasoning, cayenne pepper, and Worcestershire sauce. Cook for about 2-3 minutes or until the shrimp turn pink and opaque.

                    Combine and Serve:

                      - Plate a generous portion of cheesy grits, then top with the shrimp mixture.

                        - Sprinkle the reserved bacon, sliced green onions, and fresh parsley on top.

                          - Serve with lemon wedges on the side for an extra zest.
