8 oz (225g) pasta of your choice (fettuccine or penne recommended)

2 cups fresh spinach, roughly chopped

1 cup mushrooms, sliced (button or cremini)

2 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream (or coconut cream for a dairy-free option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan alternative)

2 tbsp olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Zest of 1 lemon (optional for brightness)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for another 5-6 minutes until the mushrooms are tender and slightly browned.

      Add Spinach: Stir in the chopped spinach and cook for 2-3 minutes, allowing it to wilt down.

        Make the Sauce: Lower the heat and pour in the heavy cream (or coconut cream). Stir well to combine. Add the grated Parmesan cheese (or nutritional yeast), dried oregano, and red pepper flakes. Season with salt and pepper to taste. Let the sauce simmer for about 5 minutes to thicken slightly.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing to coat it evenly with the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

            Finishing Touches: Remove the skillet from the heat. If using, add lemon zest for a burst of freshness. Toss everything together one last time.

              Serve: Plate the creamy spinach mushroom pasta and garnish with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired.
