8 oz (225 g) pasta of your choice (fettuccine or penne work great)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 teaspoon dried basil

1 teaspoon oregano

½ teaspoon red pepper flakes (optional, for heat)

1 cup fresh spinach, roughly chopped

½ cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, saving about ½ cup of the pasta water.

    Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant, but not browned.

      Add Tomatoes and Spices: Stir in the diced tomatoes (with their juices), dried basil, oregano, and red pepper flakes. Simmer for about 5-7 minutes, allowing the mixture to thicken slightly.

        Incorporate Spinach: Add the chopped spinach into the skillet and cook for another 2-3 minutes until wilted.

          Make it Creamy: Pour in the heavy cream and stir well to combine. Let it simmer for an additional 2-3 minutes, then add in the grated Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

            Combine Pasta and Sauce: Add the cooked pasta into the skillet and toss well to coat. Season with salt and pepper to taste.

              Serve: Divide the creamy tomato and spinach pasta among plates, garnishing with fresh basil leaves and extra Parmesan if desired.
