12 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, diced

2 tbsp Cajun seasoning

2 tbsp olive oil

1 small onion, chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 cup heavy cream

1 cup shredded white cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Prepare Chicken: While pasta is cooking, season the diced chicken with Cajun seasoning, salt, and pepper.

      Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove chicken from skillet and set aside.

        Cook Vegetables: In the same skillet, add the onion and cook for 2-3 minutes until translucent. Add garlic and red bell pepper, cooking until the bell pepper is tender, about 3-4 minutes.

          Make Creamy Sauce: Lower the heat to medium, and pour in the heavy cream. Bring to a slight simmer, then add both the white cheddar and Parmesan cheese, stirring until melted and smooth.

            Combine Ingredients: Return the chicken to the skillet and mix well. Add the cooked fettuccine to the sauce, stirring to combine. If the sauce is too thick, add a bit of reserved pasta water to reach the desired consistency.

              Serve: Taste and adjust seasoning with more salt, pepper, or Cajun seasoning if desired. Serve hot, garnished with fresh parsley.
