Ingredients
  

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 can cannellini beans drained and rinsed
  • 1 cup chicken broth low-sodium recommended
  • 1 cup heavy cream
  • 1 cup frozen corn thawed
  • 1 tablespoon jalapeño, diced remove seeds for less heat
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons olive oil for sautéing
  • salt and pepper to taste

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the diced chicken breasts and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
  • Add the minced garlic and diced jalapeño to the pot. Sauté for another 2 minutes until fragrant, stirring occasionally.
  • Pour in the chicken broth, and add the cannellini beans, corn, ground cumin, and chili powder. Stir well to combine and bring to a simmer.
  • Reduce the heat to low and stir in the heavy cream and lime juice. Allow the chili to cook for an additional 10 minutes, stirring occasionally, until heated through and slightly thickened.
  • Taste and adjust seasoning with additional salt, pepper, or lime juice if needed. Serve hot, garnished with fresh cilantro if desired.
