Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup unsweetened almond milk (or any plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup breadcrumbs (panko for extra crunch)

Buffalo Sauce:

½ cup hot sauce (like Frank’s RedHot)

4 tablespoons unsalted butter (or use vegan butter for a plant-based version)

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Instructions

Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Ensure they are uniform in size for even cooking.

Make the Batter: In a bowl, combine the flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until smooth and well combined.

Bread the Cauliflower: In a separate shallow dish, add the breadcrumbs. Dip each cauliflower floret into the batter, allowing excess to drip off, and then coat with breadcrumbs. Place the breaded florets on a plate.

Air Fry the Cauliflower: Preheat your air fryer to 400°F (200°C) for about 5 minutes. Arrange the breaded cauliflower wings in a single layer in the air fryer basket. You may need to do this in batches depending on your air fryer’s size. Spray lightly with cooking oil. Cook for 10-12 minutes, shaking the basket halfway through until crispy and golden brown.

Prepare the Buffalo Sauce: In a small saucepan over low heat, melt the butter. Once melted, remove from heat and mix in the hot sauce, apple cider vinegar, and garlic powder. Stir until well combined.

Coat the Cauliflower Wings: Once the cauliflower is done cooking, place it in a large bowl and drizzle with the buffalo sauce. Toss until all the wings are evenly coated.

Crisp Again (Optional): For extra crispiness, return the coated cauliflower wings to the air fryer in a single layer and cook for an additional 2-3 minutes.

Serve: Remove from the air fryer and serve hot with your favorite dipping sauce, such as ranch or blue cheese, alongside celery and carrot sticks for a perfect meal or snack.
