1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

4 ounces ham, thinly sliced and chopped

4 ounces Swiss cheese, diced or shredded

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Cooking spray or olive oil spray

Prepare the Chicken Mixture: In a bowl, combine the chopped ham and Swiss cheese. Set aside.

    Pound the Chicken: If desired, lightly pound the chicken pieces using a meat mallet to ensure even cooking. This helps them stay tender.

      Assemble the Bites: Take a piece of chicken, place a teaspoon of the ham and cheese mixture in the center, and fold the chicken over to encase the filling. Secure with a toothpick if necessary. Repeat with the remaining chicken.

        Set Up the Breading Station: In three separate bowls, place the flour mixed with garlic powder, onion powder, paprika, salt, and pepper in one, the beaten eggs in the second, and the panko breadcrumbs in the third.

          Bread the Chicken Bites: Dip each chicken piece first into the flour, shaking off excess, then into the egg wash, and finally into the panko breadcrumbs, ensuring they are well-coated. Place them on a plate or tray.

            Air Fry: Preheat your air fryer to 375F (190C). Once preheated, lightly spray the air fryer basket with cooking spray. Arrange the chicken bites in a single layer in the basket, making sure they are not overcrowded. Spray the tops with a light coating of cooking spray.

              Cook: Air fry for 10-12 minutes, flipping halfway through, until they are golden brown and crispy. Ensure the internal temperature of the chicken reaches 165F (74C).

                Serve: Remove from the air fryer and allow to cool slightly. Serve warm with your favorite dipping sauce, such as honey mustard or ranch dressing.
