4 medium russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: Wash and scrub the russet potatoes thoroughly to remove dirt. Cut each potato into wedges, aiming for uniform thickness (about 1/2 inch thick) to ensure even cooking.

    Soak the Wedges: Place the potato wedges in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make the wedges crispier.

      Dry the Wedges: Drain the soaked wedges and pat them dry with a clean kitchen towel or paper towels. Moisture can prevent them from becoming crispy.

        Season the Wedges: In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, dried oregano, salt, and black pepper. Stir until well blended. Add the dried potato wedges to the bowl and toss until they are well coated in the seasoning mixture.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

            Cook the Wedges: Arrange the seasoned potato wedges in a single layer in the air fryer basket. Cook in batches if necessary, to avoid overcrowding. Air fry at 400°F (200°C) for 15-18 minutes, flipping halfway through, until golden brown and crispy.

              Check for Crispiness: After 15 minutes, check the wedges for crispiness; air fry for an additional 2-4 minutes if needed.
