Ingredients
  

1 cup fresh ricotta cheese

1/2 cup almond flour

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 package (about 10 sheets) of wonton wrappers

Cooking spray

Powdered sugar for dusting (optional)

Prepare the Filling: In a mixing bowl, combine the ricotta cheese, almond flour, grated Parmesan cheese, egg, vanilla extract, almond extract, salt, and cinnamon. Mix well until you have a smooth and creamy filling.

    Assemble the Pillows: Lay a wonton wrapper on a clean surface. Place about 1 teaspoon of the ricotta mixture in the center. Use your finger to dampen the edges of the wrapper with a little water. Fold the wrapper over to create a triangle, pressing down to seal. Make sure to remove any air pockets. Repeat until all the filling is used.

      Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.

        Prepare for Cooking: Spray the air fryer basket with cooking spray. Place the filled wonton pillows in the basket in a single layer. Avoid overcrowding to ensure even cooking. Lightly spray the tops of the pillows with cooking spray.

          Air Fry the Pillows: Cook in the air fryer at 350°F (175°C) for about 8-10 minutes, or until golden brown and crispy. Check halfway through cooking and shake the basket gently to turn the pillows for even crispiness.

            Serve: Once cooked, remove the pillows from the air fryer. Allow them to cool slightly, then dust with powdered sugar if desired. Serve warm with a side of honey or a berry compote for dipping.
