1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp paprika

1 tsp garlic powder

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

Vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1-2 tsp sriracha (adjust for heat)

1 tsp lime juice

1/2 tsp sesame oil

Chopped green onions (for garnish)

Prepare the Shrimp: In a mixing bowl, soak the shrimp in buttermilk for at least 30 minutes. This will tenderize them and add flavor.

    Set Up Breading Station: In one shallow dish, combine flour, paprika, garlic powder, cayenne pepper, salt, and pepper. In another dish, place the panko breadcrumbs.

      Coat the Shrimp: Remove shrimp from buttermilk, allowing excess to drip off. Dip each shrimp into the flour mixture, coating evenly, then into the panko breadcrumbs. Make sure each shrimp is fully covered for maximum crispiness.

        Heat Oil: In a large skillet or deep fryer, heat about 1 inch of vegetable oil to 350°F (175°C).

          Fry the Shrimp: Working in batches, fry the shrimp for 2-3 minutes on each side until golden brown and crispy. Avoid overcrowding the pan to ensure even cooking. Remove with a slotted spoon and drain on paper towels.

            Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and sesame oil until smooth. Adjust the spice level as desired.

              Serve: Toss the crispy shrimp in the Bang Bang sauce or serve it on the side for dipping. Garnish with chopped green onions.
