1 lb fresh calamari, cleaned and cut into rings

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

Vegetable oil, for frying

Fresh lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Marinara sauce or aioli, for dipping

Instructions
 

Marinate the Calamari: In a bowl, combine the cleaned calamari rings with buttermilk. Cover and let it marinate in the refrigerator for at least 30 minutes. This helps tenderize the squid and adds flavor.

    Prepare the Dredging Mixture: In a separate bowl, mix together the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper until well combined.

      Heat the Oil: In a large, deep frying pan or a Dutch oven, pour enough vegetable oil to submerge the calamari (about 2 inches deep). Heat the oil to 375°F (190°C) over medium-high heat. Use a thermometer for accuracy.

        Dredge the Calamari: Remove the calamari from the buttermilk, allowing excess to drip off. Toss the rings in the flour and cornmeal mixture until evenly coated. Shake off any excess flour.

          Fry the Calamari: Working in batches, carefully add the calamari rings to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pan as this can lower the oil temperature.

            Drain and Serve: Once fried, use a slotted spoon to remove the calamari from the oil and place them on a paper towel-lined plate to absorb excess oil. Season with additional salt while they are still hot.

              Garnish and Enjoy: Arrange the crispy fried calamari on a serving platter. Garnish with chopped parsley and serve with fresh lemon wedges and your choice of marinara sauce or aioli for dipping.
