1 pound fresh calamari, cleaned and cut into rings

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for heat preference)

Salt and black pepper to taste

Vegetable oil, for frying

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Marinara sauce, for dipping (optional)

Marinate Calamari: In a medium bowl, pour the buttermilk over the calamari rings, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes to tenderize the squid and enhance flavor.

    Prepare Breading Mixture: In a separate bowl, combine the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to ensure the spices are evenly distributed.

      Heat Oil: In a deep frying pan or a Dutch oven, pour vegetable oil to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches 375°F (190°C). You can test the oil by dropping a small amount of the breading mixture into it; if it sizzles and floats to the surface, it’s ready.

        Bread the Calamari: Remove a few calamari rings from the buttermilk and allow excess to drip off. Dredge them in the flour-cornmeal mixture, ensuring they are fully coated. Shake off any excess breading and place them on a baking sheet.

          Fry the Calamari: Carefully add the breaded calamari to the hot oil in small batches to avoid overcrowding. Fry for 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove them from the oil and transfer to a paper towel-lined plate to drain any excess oil.

            Serve: Once all the calamari are fried, arrange them on a serving platter. Garnish with chopped parsley and serve immediately with lemon wedges and marinara sauce on the side for dipping.
