Crispy Ham & Cheese Puff Pastry Stacks

1 package (17.3 oz) frozen puff pastry sheets, thawed

8 oz thinly sliced ham

8 oz Swiss cheese, sliced

1 large egg, beaten (for egg wash)

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon dried thyme (optional)

Sea salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface. Using a sharp knife, cut the pastry into rectangles (approximately 3x4 inches). You should get about 12 rectangles from one sheet.

      Assemble the Stacks: On half of the pastry rectangles, spread a thin layer of Dijon mustard. Layer 1-2 slices of ham followed by 1-2 slices of Swiss cheese. If desired, sprinkle a pinch of dried thyme, salt, and pepper over the cheese.

        Top with Pastry: Place another rectangle of pastry on top of each assembled stack, pressing the edges gently to seal.

          Brush with Egg Wash: Using a pastry brush, coat the tops of the stacks with the beaten egg. This will give them a beautiful golden-brown color once baked.

            Bake: Place the stacks on the prepared baking sheet and bake in the preheated oven for about 20-25 minutes or until they are puffed and golden brown.

              Garnish and Serve: Remove from the oven and let them cool slightly. Garnish with chopped fresh parsley and serve warm.
