1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

2 tsp lemon pepper seasoning

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup grated Parmesan cheese (optional)

1/2 cup buttermilk

Zest of 1 lemon

Vegetable oil for frying

Fresh lemon wedges for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with buttermilk and lemon zest. Let it marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).

    Prepare Breading Station: Set up three shallow bowls for breading. In the first bowl, place the flour. In the second bowl, whisk the eggs until beaten. In the third bowl, combine breadcrumbs, lemon pepper seasoning, garlic powder, salt, black pepper, and Parmesan cheese.

      Coat the Chicken: Remove chicken pieces from the marinade, shaking off excess buttermilk. Dredge each piece in flour, then dip into the beaten eggs, and finally coat thoroughly with the breadcrumb mixture. Set aside on a plate.

        Heat the Oil: In a large, deep skillet or pot, pour in enough vegetable oil to reach about 1 inch deep. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can check this by dropping in a small piece of bread; it should sizzle and turn golden brown.

          Fry the Chicken: Carefully drop the coated chicken bites into the hot oil in batches, being sure not to overcrowd the pan. Fry for 4-5 minutes per side or until they are golden brown and cooked through. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            Serve: Transfer crispy chicken bites onto a serving platter. Garnish with fresh parsley and serve with lemon wedges on the side for extra zing.
