1 cup buttermilk

1 tablespoon lemon zest

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

1 cup all-purpose flour

½ cup breadcrumbs (panko for extra crunch)

Salt, to taste

Vegetable oil, for frying

4 burger buns (preferably brioche or whole grain)

½ cup mayonnaise

2 tablespoons lemon juice

1 cup arugula or baby spinach

Sliced tomatoes, for topping

Sliced pickles, for topping

Marinate the Chicken: In a bowl, combine the buttermilk, lemon zest, black pepper, garlic powder, onion powder, and paprika. Add the chicken breasts, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour (up to overnight for more flavor).

    Prepare the Breading: In one bowl, mix the flour and a pinch of salt. In another bowl, mix the breadcrumbs with a sprinkle of salt.

      Bread the Chicken: Remove the marinated chicken from the buttermilk, allowing the excess to drip off. Dredge the chicken in the flour mixture, ensuring it's well coated. Then, dip it back into the buttermilk and finally coat it in the breadcrumb mixture for a crispy finish.

        Fry the Chicken: In a deep skillet or fryer, heat about 1 inch of vegetable oil over medium-high heat (approximately 350°F/175°C).
