1 jar (16 oz) dill pickles, sliced into chips

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or oil for drizzling

Optional: Ranch dressing or spicy mayo for dipping

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Set up your breading station: Place the flour in a shallow bowl. In a second bowl, beat the eggs. In a third shallow bowl, combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.

      Pat the pickle chips dry with paper towels to remove excess moisture, which helps them crisp up.

        Dredge each pickle slice in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing the excess to drip off. Finally, coat the pickle in the seasoned panko mixture, pressing it gently to adhere.

          Arrange the coated pickles in a single layer on the prepared baking sheet. Lightly spray or drizzle them with cooking oil to help them crisp in the oven.

            Bake in the preheated oven for about 20-25 minutes, or until the pickles are golden brown and crispy, flipping them halfway through for even cooking.

              Once done, remove them from the oven and let them cool for a few minutes before serving.

                Serve with your choice of ranch dressing or spicy mayo for dipping.
